Cool Beans, Bean Soup and Roasted chickpeas with crunch.

So this week K-Hits is giving away "Cool Beans" lottery tickets.  Could mean thousands of dollars to a lucky listener.  Reminded me of bean soup my mother would make at the end of the month when the grocery budget was down to nothing.  I loved that soup.  Our family's tradition was pouring in your ketchup, delicious.  It's still on my comfort food list.



I've come to use beans more as an economical answer to my nutritional needs.  I solved one problem of not being able to use an entire can of beans without them going bad by marinating half the can in a red wine vinegar and olive oil mix as a salad topper.  At other times I used the marinated beans on a serving of quinoa another great source of protein. 

I heard a good friend of mine suggest that our diets have gone to such a meat based one that it could be one of the sources of dis "ease" with not only our bodies, but our land.  It just seems that land that was created for use by deer and other ungulates is overused by animals brought in to feed our mouths as well as our economy.   River and creek banks have been damaged by cattle on the free range that is Idaho.    Perhaps we need to use meat as a condiment, rather than a mainstay.

The texture of Roasted Chickpeas is surprisingly crispy/crunchy – they make that lovely, loud crunch in your mouth like potato chips. And when you tell people that this recipe starts with 1 can of garbanzo beans, they won’t believe you.
